Have you ever wondered what the difference is between tomato paste and tomato puree? Can they be used interchangeably? Read on to find out how they are made and whether you can use one instead of the other when whipping up your favorite dishes.


Tomato puree is a canned product made from fresh, ripe tomatoes that are cooked, then blended into a thick liquid just slightly thicker than a typical tomato sauce. However, unlike tomato sauce which can be chunky, tomato puree is smooth and uniform. An acid (like lemon juice) and salt is usually added giving tomato puree a bright flavor. It comes in cans ranging from about 15 to 28 ounces.


Tomato paste is a concentrated form of cooked tomatoes, where tomatoes are cooked, strained and recooked until most of the liquid has evaporated and the tomatoes reach a thick, pasty texture similar to toothpaste. Because tomato paste is cooked for a longer period of time, it has a deep red hue and sweet flavor thanks to the natural sugars present in the tomatoes. Like tomato puree, store-bought tomato paste may contain added acid and salt. Tomato paste typically comes in small 6 ounce cans or in a tube that is easy to recap for repeated use.


While tomato puree and tomato paste are both made from tomatoes, they differ in their consistencies, water content, flavors and preparation methods resulting in two different products. If you ever run out of one of these tomato staples yet your recipe asks for the other, don't dash out to the grocery store just yet. You can substitute one for the other by making some adjustments.


Say your recipe asks for puree and you only have tomato paste. You can thin out tomato paste by adding equal parts liquid (such as plain water or broth) to paste and whisking the two together until you get a thinner product. If it's hard to combine the two, gentle heat on the stove top can help blend them together.


Similarly, if your recipe asks for tomato paste but all you have is tomato puree, heat a small amount of cooking oil in a pan or pot on medium heat, add the puree and cook it until it reaches the desired paste-like consistency. Because of the natural sugars involved, you will want to stir the puree frequently to prevent it from sticking to the pan.


The use of thickened liquids is a common compensatory strategy to improve swallow safety. The purpose of this study was to determine the optimal liquid viscosity to use to promote successful swallowing in a specific subset of dysphagic patients who swallow puree without aspiration but thin liquid with aspiration. A referral-based sample of 84 consecutive inpatients from a large, urban, tertiary-care teaching hospital who met the study criteria was analyzed prospectively. Inclusion criteria were no preexisting dysphagia, a successful pharyngeal swallow without aspiration with puree consistency but pharyngeal dysphagia with aspiration of thin liquid consistency, and stable medical, surgical, and neurological status at the time of transnasal fiberoptic swallow testing and up to 24 h after recommendations for oral alimentation with a modified diet consisting of nectar-like and honey-like thickened liquids. Success with ingesting both nectar-like and honey-like thickened liquids and clinically evident aspiration events were recorded. Care providers were blinded to the study's purpose. All 84 patients were successfully ingesting nectar-like and honey-like thickened liquids at the time of swallow testing and up to 24 h after testing. A specific subset of dysphagic patients who swallowed puree without aspiration but aspirated thin liquid demonstrated 100 % successful swallowing of both nectar-like and honey-like thickened liquids. Therefore, a nectar-like thickened liquid appears to be adequate to promote safe swallowing in these patients and, because of patient preference for the least thick liquid, may enhance compliance and potentially contribute to maintenance of adequate hydration requirements.


Place puree in a large strainer lined with 4 pieces of cheesecloth or 1 large coffee filter. Place strainer over a large bowl; cover and refrigerate for 8 hours. Remove pumpkin from strainer and discard the liquid.

Quality IngredientsPonthier purées are almost all derived from single-origin fruits. The location of the origin of the fruit and its variety are clearly mentioned on each package of purée, thus allowing the consumer to trust in the exclusive traceability that Ponthier is able to provide. The fruit is purchased once a year when it is seasonally available and ripe. Additionally, pure cane sugar is used as the sweetener in most of the purees and the minimum fruit content is 90%, with some having a higher percentage. The Brix level is guaranteed on the label of each purée wherever it is applicable. No colorings, preservatives, or artificial flavors are ever added.


Tamarind, a fruit-like legume, has pods that grow on large evergreen trees in Mexico, India, Asia, and Africa. The pulp surrounding the seeds in the pods is scraped and the puree is used in cooking. Tamarind contains tartaric acid which provides a tart, sweet-sour flavor, making it an effective souring and pickling agent. It is the flavor signature of many Indian and Thai dishes and is popular in Mexican recipes as well.


Caution:These recommendations should not be used with bananas, dates, figs, Asian pears, tomatoes, cantaloupe and other melons, papaya, persimmons, ripe mango or coconut. There are no home canning recommendations available for purees of these products.


Pumpkin puree plays a starring role in Thanksgiving desserts, but you should consider making it a more regular part of your diet. The bright orange flesh of a pumpkin is loaded with fiber and key vitamins and minerals. It's also easy to use pumpkin puree in a variety of recipes from sweet to savory.


If your diet is like the average American's, you don't get enough fiber. You should consume between 20 and 35 grams of fiber each day, according to the Harvard School of Public Health, but many people don't get more than 15 grams. Fiber helps you digest your food efficiently, which helps your body absorb the nutrients from your food. Getting enough fiber can keep you from getting constipated as well. One cup of pumpkin puree provides you with 7.1 grams of dietary fiber. Pumpkin puree contains about 10 percent of your daily requirement for potassium as well. A 1-cup serving of pumpkin puree supplies 3.4 grams of iron, a mineral that helps keep you from getting sick by supporting a strong immune system. This is about 43 percent of the 8 milligrams men need each day, and about 20 percent of the 18 milligrams women need. The same serving of pumpkin puree contains 1,906 micrograms of vitamin A, which boosts your immune system, as well as keeps your eyes, bones and teeth healthy. You need between 700 and 900 micrograms of vitamin A each day, and pumpkin is an excellent source. You also get about 15 percent of your daily vitamin E needs from a serving of pumpkin puree.
